An option is to use (or modify) the chinese version - that is you coat the sliced apples in rice flour, then put them in a light batter (100g self raising flour, 100g iced water, one egg, 1/4 teaspoon of bicarb). Fry them two or three at a time (more if you have a bigger fryer/wok), then set aside. Make the toffee mixture (200g caster sugar, 50g water) then when that&#039;s just started to turn golden brown, take off the heat, toss in the apple (traditionally along with some sesame seeds... could also add in some food colouring if you wanted), mix to coat, take them out and plunge straight into iced water to set. Eat with icecream but could always put toothpicks in them before putting them in the water!

Also works with other fruit - eg banana.

Place on baking paper to dry. Store in an air tight jar. Great with cheese platters</description>
